Greek and Mediterranean flavours create a delicious lunch ; I also recommend our “Rainbow salad” to enjoy with this cake !
100g wholemeal flour T150 (or half-whole meal flour T110)
10g baking powder
100ml oat milk
1 tin tuna
A handful of olives of your choice
1 small courgettes
90g organic feta cheese
A handful of pumpkin seeds
Salt and pepper
Preheat the oven to 180°
Wash and dice the courgettes and slowly fry in a pan with olive oil for a few minutes ; then season with salt and pepper.
Mix wholemeal flour, baking powder, eggs, salt and pepper in a large bowl.
Add oat milk and olive oil.
Add olives, crumbled tuna, crumbled feta and courgettesi.
Pour the mixture into a greased loaf pan (with butter or oil).
Sprinkle with the pumpkin seeds.
Bake the loaf for 45 minutes.
